According to Webster dictionary, stationery means a paper piece is cut to write a letter. The stationery in old days was used for those people who used to sell products from a fixed place instead of people who wandered around the countryside to sell their products. 
By Middle ages, Universities started adopting this term and started providing license to stationery sellers. They used to sell products from office accessories to paper and other products used for writing. These stationeries still exist today but sell far more than just the stationery items that were sold in those years. Today stationery shops sell around 100 products ranging from school, to university products to office appliances.

Letterhead, that was used on the stationery in the old days is still used by the same name. However, the letterhead was a heading in the old days but now it is named the paper itself. Letterheads are used as a trademark or the official note from company, state or any other entity that is involved in any kind of business for profit making for NGO's that are not for profit.
Letterhead in old days was not designed, instead a title was used to define the company from which the letter is dispatched, however, companies now emphasize more on using letterhead designed by a professional designer for the purpose.
